Weekend Getaway. Destination: NC

So I decided to spend the weekend in Greenville, NC visiting my older sister, Charlsey, and her husband, Scott. It was a trip filled with delicious treats and good times of the beach!
made-to-order guacamole at Plaza Azteca.
We all went to Plaza Azteca for mom's FIRST MARGARITA EXPERIENCE. Ahhh! She actually chickened out and ended up ordering a strawberry daiquiri, but she tried both my peach margarita and Charlsey's Texas Tornado margarita.
extra LIMEEEE.
The guacamole at this place is seriously legendary.  I could eat it for daysss and be as happy as a clam.
Margarita de Durazno!

chicken fajitas: my go-to mexican dish.

sizzling deliciousness.

charro beans.
We also cheated on our healthy-diets a couple of times, most notably with Jet's Pizza. Scott works there and we got pizza one night for an easy movie night. It was so worth cheating!
Jet's Pizza!

chicken, tomato and feta.

sausage, pepper and onion.
And, for a quick (and slightly healthy dessert), we went to Local Yogurt, or Lo-Yo for short. There's all kinds of different flavors of frozen yogurt and SOO MANY toppings! I got a little adventurous and got mine topped with Strawberry Boba. If you've ever heard of Bubble Tea, it's the same thing. They're these little, squishy, liquid-filled balls that pop when you eat them. So fun!!

loving my dessert!

The argentine view of breakfast consists of café con leche and a medialuna. And that's about it. Now I'm from the south, and that just didn't seem right to me, but as they say, "when in rome..." But now that I'm back in God's country, the lovely land of bluegrass, sweet tea and fried foods, I'm gonna eat HUGE southern (but healthy; can't be a fatty, y'all) breakfasts until my little heart dies of happiness. Here goes:
Farm fresh eggs, black beans, sausage and skillet-fried sweet potatoes.
And since we couldn't decide which was a more suitable Fourth of July meal, we went with the steaks yesterday and saved the pork ribs for today. And man, were they delicious! Smothered in barbeque sauce, they went great with barbeque baked beans (made by yours truly) and ranch potato salad, one of my mom's favorites.
RIBS. to die for. with baked beans and ranch potato salad.
And for dessert: a bowl of brownie ice cream, sugar free, of course. In all honesty, it wasn't that great. A little too sweet for my taste. I think now that I'm home, I'll stick to my sugar free fudgesicles (don't knock 'em til you've tried 'em!) and other goodies to satisfy my sweet tooth.

Fourth of July

What a perfect time to come back to the states. It's summertime, the living's easy, and most importantly, it's the Fourth of July. Which means, of course, good, southern food. God Bless America and the South :)
American food. Por fin!

omg sweet potatoes. how i've missed you.
I know that Argentina is famous for their steak, but they've got nothing on our grass-fed beef. Oh, how I've missed this.
grass-fed steak. straight from the farm.

look at those grill marks.

zucchini, yellow squash and onion.

the finished product!

a true welcome-home meal.
There's really nothing better than coming home to true, southern, home-cooked meals. It's like America itself is welcoming home :)

Aguas Calientes - Día 2

After a very grueling day hiking the ruins of Machu Picchu, we all thought we deserved a delicious meal. This little open restaurant a few doors down from  our hotel was definitely a good choice.
Pollo al ajo
I got garlic chicken, which I thought was going to be simple grilled chicken with garlic and spices; it turned out to be chicken with this AMAZING white garlic sauce slathered on top. yumm!
deliciousness!
Before heading back to Cusco, dad found a really nice, buffet-style restaurant near the train station where we killed a couple hours before our train.
buffet lunch - entradas (starters)

the main courses.

dessert! cream puff = heaven.
I ate so much I was nearly in a food coma for the train ride back to Cusco. Definitely worth it though.
